This makes a great canvas for whatever seasoning you want to add in the end, such as taco seasoning.
- 2 chicken breasts
- 2 cups chicken broth
- 1 onion, peeled & halved
4 small servings
Add all the ingredients in a narrow pot with not a lot of space on the sides so that the liquid will cover the chicken. Bring to boil, and then let simmer covered for 90 minutes, flipping the chicken occasionally.
Move the chicken to a bowl and shred with two forks. Add some broth to the chicken to keep it moist. (You might want to reduce the broth for added flavor.)
