Wow. These are incredibly easy and incredibly good. If you pardon my comparison, they have the moist, dense texture of a Little Debbie brownie, which I loved as a kid. Of course, these are made with good things. And I mean good things. Since this is raw, you should really use quality ingredients: plump figs, Scharffen Berger cocoa, etc.

I bet this would make a great no-bake pie crust because it's delicious but also very malleable. Shape them however you want. Today, I went with 1" squares so they're not so much energy bars as energy bites.

Ingredients

  • 1 cup (about 12) dried mission figs
  • 1 cup raw cashews
  • 1/2 cup raw almonds
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp kosher salt
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup raw agave nectar
36 squares

Directions

Remove the stems of the figs.

In a food processor, combine figs, cashews, almonds, cocoa powder, and salt. Process until well combined (about 1 minutes).

Add coconut flakes and agave nectar. Pulse until combined.

Remove from food processor and press firmly into a pan.

(Parchment paper would make it easier to remove later, but I've had no problem doing without. I press mine into one end of a jelly roll pan, using a pasta scraper to get a nice straight edge.)

Refrigerate to make it easier to cut.
