pistachio ice cream

This recipe has a double hit of pistachio; it's blended in the base and accented with whole nuts. Very pistachio. Very good.

Ingredients

  • 8 oz roasted unsalted shelled pistachios
  • 1/2 cup sugar
  • 1 1/2 cups whole milk
  • 2 eggs
  • 2 cups heavy whipping cream
1 quart

Directions

Set aside 1/3 cup pistachios.

Blend the rest of the pistachios with the whole milk in a blender for about a minute.

Whisk the eggs and sugar until they turn light in color. Then whisk in the cream, milk, and pistachio milk.

Transfer the mixture to an ice cream maker and churn according to your machine. As it churns, add in the reserved pistachios.

Transfer to freezer-safe containers and freeze for at least 4 hours before serving.

    The taste is excellent especially with the taste of nutty pistachio in the ice cream. It is delicious and pistachio is good food for your body.
