
This is a very unorthodox method: combine the flour and egg together in one bowl, and then "dredge" the chicken. It's weird, but it works.
Ingredients
- 1 lb chicken breast meat
- 1/2 cup all-purpose flour
- 1/2 cup panko
- 2 eggs
- 2 tbsp Lawry's seasoned salt
- 1/4 cup olive oil
- 1/4 cup butter

Directions
Remove any tendons in the chicken and cut into strips. Slice thick pieces in half. Set aside.
Mix the flour, panko, and seasoned salt. Add the two eggs. Using your fingers, combine the chicken in the flour/egg mixture until fully integrated and coated.
Heat oil and butter in a large saucepan. Add the chicken and cook until the bottom is brown. Flip and brown the other side.
Remove from heat. Serve warm.
