Here's my quick and dirty version of a ma-po that you can eat for breakfast. I'm sure you could add a runny egg on top to make this even better.

Ingredients

  • 3 slices thick-cut bacon, thinly sliced
  • 1 bunch kale, thinly sliced
  • 1/4 cup chili bean sauce
  • 1/4 cup black bean chili sauce
  • 2 tbsp soy sauce
  • 2 tbsp xiao xing
  • 2 tsp sesame oil
  • 4 green onions, sliced
  • 1 block firm tofu, cut into 1/2" cubes
4 small servings

Directions

Cook the bacon over medium-high heat in a large skillet.

When it's almost crunchy and most of the fat has rendered, add the kale and cook until the kale wilts.

Mix together the chili bean sauce, black bean chili sauce, soy sauce, xiao xing, and sesame oil. Add it to the pot along with half the green onions. Mix well.

Gently fold in the tofu and cook for another 5-10 minutes.

Remove from heat, plate, and top with the remaining green onions.
