You can make any kind of dry rub. Here's my basic salt and spice mix. A dry rub is just about the easiest way to prepare a roast chicken, and I think it's the tastiest, too.

Ingredients

  • 4 lb chicken
  • 2 tsp kosher salt
  • 2 tsp paprika
  • 2 tsp brown sugar
  • 1 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper (optional)

Directions

Preheat oven to 400ยบ.

Wash and pat dry the chicken inside and out. (The outside can be a bit damp to help the spices stick, but the inside should be as dry as possible without doing anything weird.)

Place it breast-side up on a cast-iron skillet.

Combine the salt and spices. Rub it all over the chicken.

Place the skillet on the lowest rack in the oven and cook for about 1 hour. Keep an eye on it. If the top gets too brown, you can tent a little bit of foil on top.

Remove and let sit for 10 minutes before carving and serving.
