  • 1 cup whole milk
  • 1 egg
  • 5 tbsp butter
  • 2 tbsp sugar
  • 1/2 tsp kosher salt
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 6 oz blueberries
4 servings


Preheat oven to 375 degrees.

Melt 4 tablespoons of butter.

Whisk together the milk, egg, melted butter, salt, and half the sugar. Then sift in the flour and baking powder. Use a spoon to mix just until combined, taking care not to overwork the batter. Let sit a couple minutes to thicken.

Place the final pat of butter in a 10-inch skillet, and place in the oven until the buter has melted. Remove from oven and swirl to coat bottom of pan. Pour batter into skillet. Scatter blueberries on top, and sprinkle with remaining sugar.

Bake until the top is nicely browned, about 35 minutes.

Let cool before serving.
