Okara is kind of awesome. It's low in fat, high in fiber, and contains protein, calcium, and iron. Sometimes it's pretentious and you hate it, but you still want it to ask you to the prom.

Sprinkle toasted okara on veggies or use it in granola. I haven't tried this yet, but I plan to use it where I might otherwise use panko. I'll let you know how it goes.

Ingredients

  • 1 cup okara
  • 1 tbsp sesame oil
  • 1 tbsp white sesame seeds
1 cup

Directions

Preheat oven to 300ยบ.

Combine okara, sesame oil, and sesame seeds. Spread on a cookie sheet or jelly roll pan.

Bake. Every 10 minutes, remove, stir, and return to the oven. Once the okara seems toasty and dry, you're done. This will, of course, depend on how moise your okara is. My okara is hand-wrung and took an hour to dry. I suspect a machine will yield drier okara.
