
Because I can't leave things at plain, I tweaked this recipe a bit -- cutting it in half and adding flavoring before baking.
Ingredients
- 1 butternut squash
- 1 Tablespoon olive oil
- 2 Tablespoons brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon pepper

Directions
Preheat the oven to 400ยบ.
Cut the squash in half and remove the seeds and stringy stuff.
Coat cut edges with olive oil.
Mix the remaining ingredients and split between the two halves -- sprinkling a little on the surface but most of it in the bowl of the squash.
Cover and bake for 30 minutes.
Uncover and bake 30 minutes longer.
Take it out and let it sit for a few minutes.
Remove the skin and roughly dice. Then serve.
