Pink Squirrel Brownies

For a Valentine's Day party, I thought I'd riff on the famous Pink Squirrel cocktail (creme de cacao, creme de noyaux, and cream) by making a Pink Squirrel brownie. Here's what I came up with on the fly:

Ingredients

  • Brownie base:
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 large eggs
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup flour
  • 1/3 cup cocoa powder (I used Valrhona, because I'm faaaaancy)
  • Topping:
  • 1/2 cup butter, room temperature (1 stick)
  • 3 tbsp heavy cream
  • 2 tbsp cornstarch
  • 2 cups confectioners sugar
  • 1 tsp almond extract (more to taste)
  • 6 drops red food dye
25 two-bite brownies

Directions

Brownie base:
Preheat oven to 350ยบ
Line a 8x8 pan with parchment and grease
Mix oil and sugar together
Add eggs and vanilla, stir just until blended
Mix all dry ingredients in a separate bowl
Stir dry ingredients into wet ingredients
Pour into pan
Bake for 25 minutes, or until the sides start to pull away from the pan
Cool completely

Topping:
Cream together butter, heavy cream and cornstarch until light and fluffy
Mix in food dye and almond extract
Mix in confectioners sugar in small amounts, until smooth
Add more almond and dye to get the desired taste and color
Spread over cooled brownie layer
Chill in refrigerator to set
