Tart Cherry Brownies

I found a from-scratch brownie recipe that I'm really happy with, this is a variation where I threw in tart dried cherries.

Ingredients

1/2 cup vegetable oil
1 cup sugar
1 tsp vanilla
2 large eggs
1/4 tsp baking powder
1/4 tsp salt
1/2 cup flour
1/3 cup cocoa powder (I used Valrhona, because I'm faaaaancy)
1/2 cup chopped dried tart cherries

25 two-bite brownies

Directions

Preheat oven to 350º
Line a 8x8 pan with parchment and grease
Mix oil and sugar together
Add eggs and vanilla, stir just until blended
Mix all dry ingredients in a separate bowl
Stir dry ingredients into wet ingredients
Fold in cherries
Pour into pan
Bake for 25 minutes, or until the sides start to pull away from the pan
Cool completely
