Waffles a la Brown Sugar Kitchen, avec Apple cider syrup

Reputed to be the best waffles in the bay area. This recipe appeared in the San Jose Mercury Newspaper on 7.18.1023. I thought I'd pass this on to other waffle-philes (waphiles?).

Ingredients

  • Waffles
  • .25 oz active dry yeast
  • .75 cup warm water
  • 3 eggs
  • 3 cups whole milk
  • 1 cup cornmeal
  • 2 cups AP Flour
  • 1.5 tsp kosher salt
  • 1.5 tsp sugar
  • .75 cups butter, melted.
  • .5tsp baking soda
  • veggie oil for greasing
  • Apple cider syrup
  • 1.5 cups brown sugar
  • 1.5 tsp apple cider vinegar
  • 2 cups apple cider
  • 2 cinnamon sticks
  • 2 tbsp butter

Directions

Waffles

Apparently the key to their waffles is to *not* add the baking soda until right before cooking.
Mix yeast and water, let stand for 10 mins until it blooms

A. In large bowl, which eggs, milk
B. in med bowl, sift cornmeal, flour, salt, sugar.
C. Add yeast solution to A.
D. Whisk in B into A.
E. cover and refrigerate overnight.

When ready, add baking soda into A

Apple cider syrup

combine all ingredients into saucepan
bring to boil and reduce until liquid coats back of a spoon, about 10-15mins
