This is something that I threw together in a fit of hunger. Yes, it's made mostly of packaged components from Trader Joe's but despite that, this turned out fantastic and it was so easy to make. Plus you end up with a ton of it - perfect for the ravenous or perfect as a potluck contribution.
Ingredients
- 1 box Israeli Couscous
- 1 pkg Cooked Lentils
- 2 bags Baby Spinach
- 1 bag cubed Butternut Squash
- a few Fresh Tomatoes
- 1-2 cloves Garlic
- 2-4 Tbsp Olive Oil
- 1-2 splashes of Lemon Juice
- Salt
- Pepper
Directions
Cut the butternut squash into smaller cubes - maybe 1/4 the size they start out as - and steam until tender.
Cook the couscous per the directions on the box. Just before the couscous is done throw the spinach on top of it and keep covered until spinach is cooked/wilted.
Chop up as many tomatoes as you like - fresh from the garden is ideal.
Finely mince or crush a clove of garlic.
Mix everything together and season with salt & pepper to taste.
