Lemon Jalapeno Hot Dish

This is my go-to meal if I have no time to think or prepare or otherwise engage in the cooking process beyond running to the market. For that reason, I probably make it more than my wife would like. Nevertheless, it's good and brisk and filling and malleable -- this version is the version I made tonight -- on other nights, the protein is pounded chicken breasts and it becomes much more akin to a piccata over rice. With apologies to Jon Menke from whom I stole this recipe many years ago, although its current variation has virtually nothing in common with that one. But hey, Minnesota guilt.

Ingredients

  • 1 lb ground turkey or chicken
  • salt and pepper
  • 1 bunch green onions, chopped
  • 2 cloves garlic, smashed and chopped
  • 2-3 jalapenos, chopped
  • 1 carton mushrooms, sliced
  • Juice of several fresh lemons
  • White wine
  • Long grain wild rice mix or some suitable rice preparation
  • Low sodium chicken stock
  • Fresh thyme
  • Green olives
  • Lemon wedges to garnish

Directions

Brown the seasoned ground meat in olive oil til cooked through, drain off fat. Toss in green onions, garlic, jalapenos, saute with meat briefly. Deglaze with fresh lemon juice and white wine. Let reduce by half at least. Toss in mushrooms, stir and cook briefly. Pour in wild rice mix and seasonings with stock to match directions (or if you're flying commando, however much stock you use to make your own wild rice mix). Bring to a boil, cover and simmer til rice is cooked. Add salt and pepper to taste. Toss in green olives, fresh chopped thyme and serve with lemon wedges. Easy.
