White Chocolate Green Tea Cake

White Chocolate Green Tea Cake by Sarah Xiong

Makes 9x2" cake or 2-6" layer cakes. No need for a mixer. If the butter is soft you can mix this with a spoon.


  • 3 oz white chocolate, melted and cooled
  • 3 egg yolks
  • 4 oz milk, divided
  • 3/4 tsp vanilla
  • 5 oz cake flour
  • 4.5 oz sugar, superfine
  • 2 tsp baking powder
  • 1 tbsp matcha powder
  • 2.5 oz butter, soft


Melt and cool white chocolate in the microwave.

Mix egg yolks, 1 oz milk and vanilla in a small bowl. Stir in white chocolate.

Add cake flour, salt, matcha, sugar and baking powder in a large bowl. Add butter and 3 oz milk. Stir til just moistened. Add egg mixture in 3 batches.

Bake 350 for 35 minutes.
