I guess it's a midwest thing to eat cinnamon rolls with chili. I never got to try these cinnamon rolls because I took them to a chili cook-off here in L.A. I felt awkward being the first to break into my batch. No one went for these rolls til after I left but I heard they were a hit.
I vegan-ized the original recipe because I wanted to be sure everyone could enjoy them. The addition of the potato adds for a soft and moist crumb and extends the shelf life of the bread.
Ingredients
- DOUGH
- 1 cup soy milk
- 1/2 c sugar
- 1 stick margarine
- 1/2 tsp salt
- 1 tsp vanilla
- 1 small potato
- 4 cups flour, divided
- 2 1/4 tsp yeast
- FILLING
- 3/4 - 1 cup brown sugar
- 1 rounded tablespoon cinnamon
- Pinch cardamom
- 2 1/2 tbsp melted margarine
- 1 1/4 cup chopped apples, squirted with bit of lemon juice
- FROSTING
- Handfuls of powdered sugar
- A few drops of maple syrup
- Even fewer drops of soy milk
Directions
Over low heat melt margarine, sugar, salt and soy milk in a pot til sugar is dissolved. Allow mixture to cool til warm to touch then add the vanilla extract.
Boil, peel and push the potato thru a ricer. Or use a cheese grater.
Mix 2 cups flour, yeast and potato in a kitchen aid (or hand blender). Add liquid ingredients. Add more flour as needed til the dough is workable with your hands. Take the dough out and knead on a floured work surface for 5-10 minutes. Grease a large bowl and let the dough rise for 2 hours. Place the dough in the refrigerator for a half an hour then roll it into a rectangular shape.
FILLING
Mix the filling ingredients in a bowl and spread onto dough.
Peel and chop apples and sprinkle over the cinnamon filling.
Roll then allow the dough to rise for 1 1/2 hours in the prepared pans.
Preheat the oven to 375 degrees and bake for 20 minutes. Rotate mid-way to ensure even baking.
After you pull the rolls out of the oven wait at least 10 minutes before adding the frosting.
FROSTING
Put sugar in a medium bowl. Add liquid ingredients til it reaches a condensed milk-like consistency. Drizzle over the warm rolls.
