Sourdough Ube Pan De Sal

Sourdough Ube Pan De Sal by Sarah Xiong

Ingredients

  • 4 oz ube, baked and grated
  • 3 oz whole milk
  • 1 egg
  • .5 oz water
  • 6 oz starter
  • 3 oz sugar
  • 7 oz bread flour
  • 1/2 tsp salt
  • 3 tbsp unsalted butter, soft
  • few drops purple food coloring (optional)

Directions

Add starter, milk, sugar, egg and ube in a bowl. Stir. Add bread flour and salt. Knead til soft and shiny. Add butter by the tablespoon til incorporated.

Pour into greased container. Let rise for 4 hours at room temp. Place in fridge overnight.

Roll into a large rectangle. Jelly roll the long end. Cut into 16 pieces. Roll in panko. Let rise for 2 hours. Sprinkle more panko on top right before baking.

Bake at 425 for 5 minutes, then turn down heat to 350. Bake for additional 10 minutes.
