Fluffy, light, airy. Eat warm with hands.
- 2 cups sourdough starter (100% hydration)
- 1/4 tsp salt
- 2 tbsp sugar
- 3/4 tsp baking soda
- 2 egg whites, beaten til stiff
Mix first 4 ingredients in a small bowl. Fold in egg whites. Over medium low heat fry in nonstick skillet greased with a neutral oil for about 2 minutes each side.
