sourdough pancakes

Fluffy, light, airy. Eat warm with hands.

Ingredients

  • 2 cups sourdough starter (100% hydration)
  • 1/4 tsp salt
  • 2 tbsp sugar
  • 3/4 tsp baking soda
  • 2 egg whites, beaten til stiff

Directions

Mix first 4 ingredients in a small bowl. Fold in egg whites. Over medium low heat fry in nonstick skillet greased with a neutral oil for about 2 minutes each side.
