Sichuan Chili Oil

Sichuan Chili Oil by Sarah Xiong

This is the type of chili oil restaurants serve with Beef Noodle Soup. I also like it with scallion pancakes and dim sum.

Ingredients

  • 1 cup grape seed oil
  • 1 tbsp sichuan peppercorns
  • 6 whole cloves
  • 1 cinnamon stick
  • 2 star anise
  • 1 tsp salt
  • 1 tsp sugar
  • 1/4 cup ground chilis
4-6 servings

Directions

The day before you need chili oil combine a neutral cooking oil and peppercorns in a small pan and let it sit overnight. In the morning add cloves, cinnamon and star anise to the pan and simmer for about 20 minutes. In a small heat-proof bowl put in the ground chilis, salt and sugar. Put a fine mesh sieve over the bowl and pour the hot oil directly into the bowl.
