Sausage and Minted Mushy Peas

Sausage and Minted Mushy Peas by Sarah Xiong

One of Albert James' favorite dinner brought to you by Trader Joe's.

Ingredients

  • 1 TJ's nitrate-free chicken hot dog, split
  • 2 tsp grape seed oil
  • 3 scallions, chopped
  • handful of mint, tender greens
  • 1-10 oz TJ's package of English peas
1 baby

Directions

Boil the sausage, split then lightly fry in a pan.

Add scallions, mint, oil and peas to a pan over medium heat. Cover to steam a few minutes. Remove from heat and use immersion blender right in the pot to mash. No need to salt as the sausage is salty enough.
