You can add optional ingredients like toasted walnuts, raisins, candied ginger, flax, etc.. This recipe can be baked into a loaf pan or 9" cake pan.
- 3.5 oz bleached flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 4.25 oz brown sugar
- 1 egg or 2 egg whites
- 1.75 oz grapeseed or coconut oil
- 1/2 tsp vanilla
- 6.3 oz pumpkin
Mix all dry ingredients in medium bowl.
Mix remaining ingredients except pumpkin and vanilla. Add pumpkin and vanilla. Mix in dry ingredients. Batter will be very wet.
Divide evenly into 12 muffin cups, filling 3/4 of the way full.
Bake 30 minutes at 350.
