My pumpkin was very wet so I used the full amount of flour. Start with 4.5 oz and add more flour as needed.
- 6 oz cooked pumpkin, blended in the food processor
- 1 small egg
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/8 tsp nutmeg
- 5-6 oz italian 00 flour
- rice flour
Place pumpkin a medium bowl. Make a well. Add egg in the center. Sprinkle with salt, pepper and nutmeg. Sprinkle on flour. Mix with hand starting from the center. Lightly fold flour into pumpkin. Sprinkle board with rice flour. Shape and cut pumpkin gnocchi.
