Perkedel

An Indonesian fried potato snack.

Ingredients

  • 5 med-small yellow potatoes, peeled and diced
  • 1 shallot
  • 3 garlic cloves
  • 2 tbsp fried shallots
  • 3/4 tsp nutmeg
  • 3/4 tsp white pepper
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1 egg, beaten
  • 2 tbsp cornstarch
  • 2 egg whites, boiled and chopped
  • 1 celery stalk, small dice
  • 1 green onion, sliced
  • 2 cups neutral cooking oil
  • 1 egg for wash

Directions

Fry potatoes, shallot and garlic in oil til softened. Drain. Mash in a mortar and pestle til it is smooth. Mash in fried shallots, salt, pepper and nutmeg. Stir in chopped celery, green onion, cornstarch and egg whites. Mold into 1" discs.

Dip potato cakes in egg wash and fry til golden brown.
