Matsutake is in season again!!!!
Ingredients
- 2 cups Dashi stock
- 2 cups rice
- 2 matsutake mushrooms, diced
- Handful of ginko nuts
- 2 tbsp sake
- 2 tbsp soy
- 1 1/2 tbsp mirin
- 1 tsp sea salt
- Dashi stock
- Add kombu to 4 cups cold water. Right before it boils take out the kombu. Turn off heat and add bonito flakes to the pot. Let sit for about 20 minutes. Strain before using.

Directions
Wipe off dirt from mushrooms. Combine ingredients in rice cooker.
