Indonesian street food, traditionally made with a duck egg. I included an extra yolk to make up for the richness.
- 3 tbsp rice, soaked in water overnight
- 1 large egg + yolk, lightly beaten
- 3 tbsp serundung (see link in recipe adaptation)
- 1 tbsp fried shallots
Pour rice and water in hot frying pan. Cover til rice is cooked thru.
Add half of egg mix and stir into rice. Spread into a pancake. Spread remaining egg on top of pancake. Flip over pan to cook top egg. Slide out pan and top with serundung and shallots.
