Intensely Fluffy Sourdough Pancakes

My favorite pancake.


  • 5.5 oz starter
  • 1.5 oz water
  • 2 tbsp sugar, divided
  • 1 tbsp butter, melted and cooled
  • 1 tbsp whole milk
  • pinch salt
  • 3 oz flour
  • 1 egg, separated
  • 1 egg white
  • pinch cream of tartar (optional)
  • 1/16 tsp baking powder
  • 1/8 tsp baking soda
12 silver dollar cakes


Mix starter, egg yolk, 1 tbsp sugar, water and milk. Add flour and salt. Stir in butter.

Place egg whites in a separate bowl. Whip til frothy. Add optional cream of tartar. Whip til soft peaks. Add sugar. Whip til stiff peaks.

Whisk egg whites into batter. Sprinkle baking powder and baking soda over the top and whisk.

Butter nonstick pan over medium heat. Cook about a minute on each side.
