GF Steamed Banana Cake

The fastest cake you will ever make. I once timed myself whipping up the batter in 3 minutes flat. These barely sweet cakes have a tender and light crumb with a clean coconut after taste. If you can use a natural sugar for a richer depth of flavor.

Ingredients

  • 1 egg white
  • 30g sugar
  • 1 tbsp honey
  • 1 very ripe bananas, mashed
  • 60g gf flour
  • 20g amaranth flour
  • squeeze lemon juice
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • pinch nutmeg
  • 1/4 tsp cinnamon
  • 20g coconut oil
6 little cakes

Directions

If you like a chunky cake put it all in one bowl and mash together. If you like a smooth cake use an immersion blender. Don't over mix as amaranth flour tends to get gummy. If you dislike amaranth you can adjust the ratio or use regular flour.

Steam in greased tin for 15 minutes.

Tip: use paper cups in cookie cutters to steam little cakes
