GF Banana Bread

GF Banana Bread by Sarah Xiong

This recipe can be doubled.


  • 3 very ripe bananas
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 5 oz sugar
  • 5 oz trader joes gf flour
  • 3 tbsp coconut flour
  • zest of whole lemon
  • 1 tbsp lemon juice
  • 6 tbsp melted coconut oil
  • 3 tbsp coconut cream powder
  • 2 tbsp ground flax
  • 1 tsp vanilla
5 mini loaves


In large bowl zest and juice lemon. Use an immersion blender to mash bananas. Add coconut oil, coconut cream, flax, coconut flour, sugar, salt, vanilla and eggs. Then mix in gf flour, baking powder and baking soda.

Bake in parchment lined, buttered and floured loaf pans for 350 for 1 hour or til inserted toothpick comes out clean.

Using coconut flour will create a level top.
