Slightly sweet and fluffy muffins from the pulp of your juicer.
Ingredients
- 1.5 c fiber pulp (I used spinach, carrots, parsley, apple, lemon and ginger)
- Dry
- 9.5 oz gluten free flour
- 2 oz ground flax
- 1 tsp baking soda
- Wet
- 1/3 c coconut oil
- 2 eggs
- 4 oz sugar
- 1 tsp vanilla
- 1/2 c fruit puree (applesauce, banana, or pumpkin)
- 7 oz milk (or almond, soy, yogurt)
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
12 muffins
Directions
Mix wet ingredients. Mix dry iingredients. Combine. Mixture will be runny and wet. Add fiber pulp and mix. Pour into greased and floured baking tins.
Bake 350 for 25 minutes.
