Dairy-free Banana Bread

Dairy-free Banana Bread by Sarah Xiong

Sweet lemony banana bread. For the lightest and fluffiest texture use aluminum pans.

Ingredients

  • 12 oz sugar
  • zest of 2 lemons
  • 4 oz coconut cream
  • 2 oz coconut oil
  • 6 bananas
  • 2 eggs
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 1 tsp brandy
  • 8 oz ap bleached flour
  • 5 oz gf flour mix
  • .9 oz ground flax (4 tbsp)
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
12 mini loaves

Directions

Process sugar and lemon zest til fine. Add bananas, coconut cream, oil and lemon juice. Add eggs one at a time. Add extract and brandy.

Whisk dry ingredients in a large bowl. Add banana mix in 3 batches. Pour aluminum foil tins. Bake 350 for 30 minutes or til toothpick comes out clean.
