An elegant cake for dinner parties or a husband's 37th birthday. You can't see in this photo but inside this cake is a 2" loft of amaretto whipped topping in the center. I pulled the genoise recipe from Rose Levy Beranbaum's Cake Bible and created the whip, syrup and brandied cherry recipe on my own. I'm too lazy to explain my recipe so I included a link that adapts Rose's black forest recipe.
- 1 recipe moist chocolate genoise, split
- 2 cups of heavy cream
- 1 jar of morello cherries
Split cake and layer with heavy cream. Dot with cherries.
