Banana Bread II

Banana Bread II by Sarah Xiong


  • 8 frozen bananas, thawed
  • 1 tbsp lemon juice
  • 10 oz unbleached ap flour
  • 1 tsp salt
  • 12 oz sugar
  • 4 oz oil
  • 2 eggs
  • 1 tsp baking soda
  • 2 tsp vanilla
2 loaves


Place bananas in colander with lemon juice and drain for 20 minutes.

In a small bowl whisk flour, baking soda and baking powder.

In large bowl use an immersion blender on bananas, sugar and salt. With mixer, add eggs one at a time. Add oil and vanilla.

Add 1/3 the flour mix into the wet. Add in 2 more batches.

Bake 350 for 1 hour or til toothpick inserted clean.
