Tempeh Chorizo

Tempeh Chorizo by Sarah Xiong

An alternative to pork or meat.

Ingredients

  • 1 block tempeh
  • Mix of dried chilis
  • - 3 gaujillo, 4 arbol chili, 2 new mexico, 1 chipolte
  • 3 garlic cloves
  • 1/2 onion
  • 1 tbsp cumin
  • 2 tsp oregano
  • 1/2 c water (use cider vinegar if using meat)
  • 1 block beef bullion cube
  • 1/2 tsp chicken stock powder
  • 1 tsp salt
  • black pepper

Directions

boil tempeh for 10 minutes, drain. put in processor til roughly chopped.

stem and seed chilis. dry fry them for about 2 minutes. put them in a bowl with vinegar, onions and garlic. let soak for about an hour.

put chili mix in blender. add dry spices and blend til smooth. Add water as needed to keep things moving.

add chorizo paste to tempeh. you now have tempeh chorizo.
