
Ingredients
- 4 oz pasta
- 1 avocado, peeled and pitted
- 1 lime, juiced
- 1 clove garlic
- 1/4 cup cilantro leaves (or finely diced tomato)
- 1/4 tsp kosher salt
1 large/2 small servings
Directions
Heat a large pot of salted water. Cook pasta al dente according to the package.
Meanwhile, combine the avocado, lime juice, garlic, cilantro, and salt in a food processor. Process until smooth.
Drain pasta and toss with avocado mixture. Serve immediately with freshly cracked pepper.
