This is a recipe I invented as a quick, easy, and seasonal dinner that a 3 year old might [and sometimes does!] enjoy eating.
Ingredients
- 5 ears of fresh corn
- fistful of basil
- basket of cherry or grape tomatoes
- 1 red pepper
- olive oil
- salt
- pepper
- garlic if you're feeling it

Directions
shuck that corn, girl
shave the corn off the cob with a sharp knife.
steam the corn for about 7 minutes
while that's happening:
saute your red pepper in olive oil, a bit of salt and pepper and garlic if you like garlic.
after 7 minutes, throw the corn into a festive bowl that has a nice color contrast to the vibrant yellow.
add your sauteed red pepper.
add the shredded basil.
salt and pepper to taste.
toss vigorously with tongs of some sort.
serve with a giant spoon.
