
So ya know what I’m a bit sneaky and these Watermelon Cupcakes contain no watermelon but they do taste yummy and you can trick your friends and family too. These watermelon cupcakes are just the simple recipe from AllRecipes.com and then you add food coloring and chocolate to get the watermelon affect. Fun huh?!
Ingredients
- 2/3 cup butter, softened
- 3/4 cup superfine sugar
- 1 1/2 cups self-rising flour
- 3 eggs
- 1 tsp vanilla extract
- Jar of White frosting
- Red and green food coloring
- 1 cup of Mini chocolate chips
Directions
Preheat oven to 350 degrees F .
Grease a 12 cup muffin pan or line with paper baking cups.
In a large bowl, mix butter and sugar with an electric mixer for about 5 minutes.
Stir in the eggs, one at a time.
Stir in the vanilla and flour just until mixed.
Add a drop of food coloring. You want them pink so don't overdo it. if you need more gradually add a drop or 2.
Stir in the chocolate chips.
Scoop the batter into the prepared cups.
Bake in the preheated oven until the tops spring back when lightly pressed, 18 to 20 minutes
