Our cousin Andrew Wilder is a food blogger at eatingrules.com and included these tasty treats in the welcome bag at his wedding, tastefully wrapped in wax paper. When I opened the bag and saw these bars, I literally inhaled them. Then at the wedding Andrew asked me if my kids had tried them, since they are like a super healthy rice crispy treat. Oops! Truth is, they never had the chance.

Ingredients

  • 1/2 cup Amaranth
  • 1 cup Honey
  • 1/2 cup Chopped Almonds
16 bars

Directions

Heat a large, deep skillet or wok over high heat until extremely hot. Carefully add the amaranth grains and allow them to pop while stirring constantly. Try to resist the urge to pop all the grains as this will only make them start to burn; if there are some unpopped ones, that’s okay. Remove from heat immediately, place in a bowl with the chopped almonds, and set aside.

In a small saucepan, heat the honey over medium-low heat until it’s slightly thinner than pancake syrup. Remove from heat and immediately pour into the amaranth/almond mixture. Stir until completely combined. Press the mixture into a pre-greased baking pan or cookie sheet and allow to cool for about 15-20 minutes before cutting into small rectangles. Wrap those you will not eat immediately in plastic wrap or wax paper, and store in an airtight container. Otherwise, enjoy!
