tomato sauce

Ingredients

  • 2 dozen roma tomatoes, halved
  • 2 cloves garlic, minced
  • 1 onion, finely diced
  • 1/4 cup olive oil
  • 1 tbsp oregano leaves
  • 1 tbsp thyme leaves
  • 1/2 tsp kosher salt
  • 1/2 tsp ground pepper
  • 1 cup white wine
1 quart

Directions

Preheat oven to 300º.

Place tomato halves cut side up on a couple baking sheet. Distribute the garlic and onions on the sheet. Drizzle the oil, and then sprinkle the herbs, salt, and pepper.

Bake for 2 hours, checking on them occasionally.

Then turn the oven up to 400º and bake another 30 minutes.

Remove from the oven and process in a food processor. Strain.

Add the liquid to a pot with the wine. Bring to a boil, and then reduce the heat to low and cook for another 5 minutes.
