Yerba Buena Salmon Pasta

I was a stagehand in the early 90s and once I helped on a foodie event in the Yerba Buena Gardens behind the Moscone center. There were all these chef street vendors set up. This salmon pasta was the hit of the event. My job was fire marshall so I just stood around with a fire extinguisher. I watched his whole process.... It's really a great quick meal if company shows up.

Ingredients

  • 1lb shaped pasta
  • 1 can crushed tomatos
  • 1 pint half and half
  • 1 stick butter
  • 1/4 lb salmon
  • 4 large shallots, chopped
  • 1 1/2 cup chopped dill
  • 1 tbs ground pepper
  • salt
6 servings

Directions

Cook up the pasta to al dente.

Heat a large pan over high heat

In 2 batches:
Fry up the shallots in butter until translucent.
Add salmon, cook until it begins to brown.
Add half and half. Bring to a simmer and cook for a few minutes.
Add tomatos, dill, pepper, and salt to taste. Bring to simmer and cook for a few...

Fold pasta in and serve.
