zucchini fritters

Ingredients

  • 1/2 cup all-purpose flour
  • 20 grams Comté or Gruyère cheese, finely grated
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1/2 cup of cold beer
  • 2 medium zucchinis shredded with a box grater (about 1 cup packed)
  • 1/2 small red onion shredded

Directions

Heat oil in a heavy bottomed pot until it reaches 350º.

Combine flour, cheese, salt, and pepper in one bowl. In another, beat the egg, and then slowly add the beer and gently stir. Pour this mixture into the flour and stir until just combined. Add the zucchini and onions. Stir to combine.

Drop small handfuls of zucchini mixture into the hot oil. When they turn golden brown, transfer to a paper towel lined rack.

Sprinkle with sea salt and serve immediately.
