This was delicious as is, but next time I'll try adding some fresh lime juice.
- 2 cloves garlic, finely chopped
- 1 1" piece ginger, peeled & finely chopped
- 2 tbsp dark brown sugar
- 2 tbsp vegetable oil
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tsp kosher salt
- 4-6 skinless, boneless chicken thighs
Whisk together the garlic, ginger, brown sugar, oil, fish sauce, soy sauce, and salt. Add the chicken. Coat the chicken thoroughly and set aside to marinade, from 20 minutes to a couple hours.
Cook over a medium-hot grill, roughly 5 minutes per side.
