
This is another one of those easy-to-make salsas that tastes great. You basically throw everything into the food processor, and out comes a fresh and spicy substance sure to lift any dish. The tomatillos are tangy, and the avocados add some nice creaminess.
Ingredients
- 12 tomatillos, husked and rinsed
- 2 serrano chiles
- 1 bunch cilantro
- 1/2 red onion
- 2 avocados (optional)
- 2 limes
- 1 tsp kosher salt

Directions
If you're up for it, broil your tomatillos and chiles, being sure to capture the liquid. (You don't need to do this step, but it makes for a smokier salsa.)
In a food processor or blender, combine the tomatillos, chile, cilantro, and onion. Puree well until it looks like salsa.
Remove the skin and pit of the avocado, and add the fruit to the mix, along with the juice of 2 limes. Add salt and puree one last time.
Refrigerate for 30 minutes to let the flavors combine.
