Three Cup Chicken

Super simple and super delicious. Saucy and good.


  • 1/4 cup sesame oil
  • 2" ginger, peeled and sliced
  • 4 cloves garlic, smashed
  • 2 fresh Thai chilis, stemmed and halved
  • 4 bone-in skin-on chicken thighs
  • 1/2 cup xiao xing
  • 1/4 cup soy sauce
  • 1 tbsp sugar
4 servings


Choose a pot that allows you to cook the chicken in a single layer without a lot of extra room.

Heat sesame oil in the pot over medium-high heat until shimmering. Add ginger, garlic, and chilis. Cook for a minute.

Add the chicken and cook for 1 minute on each side. Add the xiao xing, soy sauce, and sugar. Bring to a boil, and then reduce the heat to a simmer, with the pot partially covered. Flip the chicken every few minutes. Cook for 20 minutes.

Serve with rice.
