thai cucumber salad

This recipe was okay. Next time I will try it with a little less chili sauce.

Ingredients

  • 1 english cucumber, chopped
  • 1/4 tsp kosher salt
  • 4 tbsp sweet thai chili sauce
  • 2 tbsp sugar
  • 2 tbsp water
  • 1 tbsp rice vinegar
  • 1/8 red onion, sliced

Directions

Toss the cucumber and salt. Set aside in a strainer to drain.

Combine chili sauce, sugar, water, and vinegar. Heat over medium heat and let simmer until it thickens. Remove from heat and let cool.

Toss cucumbers, sauce, and red onion.

Serve.
