Ingredients
- 3 dried guajillo chiles
- 3-4 lbs pork shoulder or pork butt
- 1 3.5 oz block achiote paste
- 1/2 can chipotle chiles in adobo sauce
- 1 cup pineapple juice
- 2 tsp kosher salt
- 2 tsp brown sugar
- 1 tsp ground cumin
2 dozen tacos
Directions
Soak the guajillo chiles in boiling water for 10 minutes. Drain.
Meanwhile, thinly slice the pork shoulder against the grain.
Remove the guajillo chiles' stems and seeds. Blend together with the achiote paste, chipotle chiles and adobo sauce, pineapple juice, salt, brown sugar, and cumin. Slather it all over the pork and let marinate at least an hour.
Heat the grill or cast-iron skillet over medium-high heat. Grill in batches being sure not to crowd.
Chop up the meat and serve with tortillas, onions, cilantro, and your favorite salsa.
