steel-cut oatmeal

Who needs a recipe for cooking oatmeal? Uh, I do. From the person that tells you how to boil an egg, here is my take on oatmeal. Really, it's the way to go.

Ingredients

  • 1/2 tbsp butter
  • 1/2 cup steel-cut oats
  • 1 cup whole milk
  • 1 cup water
  • 1 tbsp brown sugar (optional)

Directions

Heat butter in a saute pan over medium heat. Add the steel-cut oats and toast, stirring occasionally. Keep going until it takes on a deeper brown and becomes fragrant, about 5 minutes.

Meanwhile, heat the milk and water in a pot over medium heat. Keep an eye on it since milk can boil over.

When it reaches a simmer, slowly add the toasted oatmeal. Be careful because the hot oats may cause your milk to boil over.

Lower the heat to a light simmer (between low and medium-low). Give it a stir every so often to prevent skin from forming on top and the bottom from browning. Cook until the liquid is absorbed and the oats are tender, about 25 minutes.

Stir in the brown sugar right before serving.
