Ingredients
- 5 oz baby spinach
- 1 tbsp smooth peanut butter
- 2 tsp mirin
- 2 tsp soy sauce
- toasted sesame seeds
4 small sides
Directions
Bring a large pot of salted water to a boil.
Meanwhile, whisk together the peanut butter, soy sauce, and mirin. Set aside.
Add the spinach and stir to quickly submerge all the leaves. Drain after 20 seconds. Rinse with cold water to stop the cooking, and then squeeze out the water using your hands.
Add the ball of spinach to a dish. Using kitchen shears, cut the ball into quarters.
Top with peanut dressing and sesame seeds.
