- 1/2 tsp vegetable oil
- 1/4 white onion, sliced
- 4 cups water
- 1 tbsp fish sauce
- 1" ginger, sliced
- hardy greens, sliced celery, or sliced daikon
- 4 oz shrimp or white fish, chopped
- sliced jalapeno (optional)
Heat the oil is a pot over medium heat. Cook the onions until they soften, about 3 minutes. Add the water, fish sauce, and ginger. Bring to a boil, and keep boiling for 5 minutes. Reduce the heat to medium and add the vegetables. Cook for 5 more minutes. Add the seafood. Once the seafood loses its pink, remove from heat and let sit for 10 minutes. Serve warm with sliced jalapenos.
