Use whatever vegetables you have on hand for this simple, clear broth soup that will make you feel warm and cozy.

Ingredients

  • 1/2 tsp vegetable oil
  • 1/4 white onion, sliced
  • 1 clove garlic, crushed
  • 1" ginger, sliced
  • 1 jalapeño or fresno chili, stemmed and sliced
  • 4 cups water or stock
  • 1 tbsp fish sauce
  • hardy greens, sliced celery, or sliced daikon
  • 4 oz shrimp, white fish, chicken - whatever, chopped

Directions

Heat the oil is a pot over medium heat. Cook the onions, garlic, ginger, and chili until they soften, about 3 minutes. Add the water or stock, as well as the fish sauce. Bring to a boil, and keep boiling for 5 minutes. Reduce the heat to medium and add the vegetables. Cook for 5 more minutes. Add the seafood or meat. Once it loses its pink, remove from heat and let sit for 10 minutes.

Serve with whatever garnish you have laying around, such as cilantro or green onion.
