Ingredients

  • 1 small sweet potato, peeled and diced
  • 1 corn on the cob, kernels removed
  • 2 tbsp canola oil
  • 1 lb ground turkey
  • 1 yellow onion, diced
  • 1 chipotle pepper in adobo sauce, seeded & diced
  • 2 tbsp chili powder
  • 1 tsp garlic powder
  • 15 oz can diced fire-roasted tomatoes
  • 1 bottle Guinness beer
  • 15 oz can kidney beans
  • 15 oz can garbanzo beans
  • 2 tsp kosher salt
  • Toppings:
  • red onions, jalapeño

Directions

Heat oven to 400º. Toss sweet potato and corn in 1 tbsp of canola oil and roast for 30 minutes.

Meanwhile, heat the rest of the oil over high heat in a pot. Add the ground turkey, onions, chipotle pepper, chili powder, and garlic powder.

Once the meat is fully cooked, add the tomatoes and beer. Give it a good stir. Bring the pot to a boil, and then reduce the heat to a simmer, stirring occasionally, until the liquid is almost fully absorbed, about 30 minutes.

Drain the beans and add them to the pot, along with the roasted sweet potatoes and corn. Add the salt and combine well. Once the beans are warm, you're ready to go!

Serve with diced red onions and jalapeño.
