sesame cucumbers

Ingredients

  • 1 English cucumber
  • 1/4 cup sesame oil
  • 2 tbsp rice vinegar
  • 2 tsp kosher salt
  • 1/4 cup toasted white sesame seeds
  • 1 tsp red pepper flakes
  • 1 green onion, sliced

Directions

Roughly chop the cucumbers into spears.

Grind the sesame seeds, red pepper flakes, and half the salt. Set half aside. Whisk the other half with the sesame oil, rice vinegar, and remaining salt. Toss with the cucumbers.

Finish with remaining sesame seeds and sliced green onions.
